Pre-heat oven to 375F (convection preferred). Place chicken in an oven safe dish alongside carrots and polenta squares (if baking polenta). Roast for about 15-20 minutes until chicken is heated through. Pour sauce into a small pan and heat over low heat until simmering Transfer to a plate with the carrots and polenta style of your choice. Drizzle tarragon sauce over the chicken and top with a sprinkle of parsley.

Soft Polenta: In a small pot, add polenta squares and a little milk or broth (for a two squares start with a .5c milk or broth, for four squares add 1c). Preheat Oven to 350. In an oven safe dish, add chicken. Cover and bake for 15 minutes until heated through, remove from the lid turn oven to broil.
