Ready to Bake Socca Batter with Whipped Feta and Tomato Confit

Best within 5 days. Preheat an oven to 350. Bring batter to room temperature, shake well. Heat a cast iron or a non-stick pan over high heat, then pour socca over. Once it starts to bubble, move to the oven and finish there until it turns crispy.

Socca is a French flatbread made from ground chickpeas, so its loaded with protein and fiber! We are pairing it with whipped feta and oven roasted tomatoes with garlic and olive oil (see dairy- free option.) Far West Fungi Mushroom Soup with Black Truffle Salt

We start this dish by sautéing shallots in homemade ghee, the layering in the mushrooms and finishing with truffle salt. Miso Ramen with Baby Bok Choy & Shiitake

Best within five days or freeze. Bring 2 cups of water to a boil and then add noodles, cooking for 5 minutes. In a separate pot, empty the ramen contents and heat over medium-high heat. Ad the noodles to the soup. For a brothier soup, also add additional hot water from cooking the noodles as well as salt to taste.

Kate's Kale Salad with Castelvetrano Olives and Garlic Dates
