Pre-heat a cast-iron or saute pan over medium-high heat. Wet a towel with a little water and gently dab the wet towel onto the sopes to moisten the outside a little. Then place in the hot pan flat side down to heat up for a minute or so, flip and cook for another 30-45 seconds. Heat up beans in a small pot, stirring frequently. Once sopes are done cooking, transfer to a plate. Add a little oil to the hot saute pan, add braised pork and/or beans saute until heated through. Heat a large cast-iron pan over high heat, add a little oil and allow to coat the entire pan. Once the oil is hot, add in your fajita veggies and your carnitas. Place a sautee pan over medium heat, once warm add carrots and cook until warmed throughnd then remove to a plate. In the same pan add in brown butter vinaigrette. Add your lentils to the warm dressing and stir for a minute or two until warmed though. Plate warmed lentils and carrots with radicchio and add herbs and top with crunchy almonds.
