Seared Brussel Sprout & Red Quinoa Salad with Fresh Herbs and Lemon-Ghee Vinaigrette

Roasted brussels sprouts from Rodoni Farms are seared in a cast iron pan and finished with a tangy dressing for a tender and delicious bite. Then we lightly massage dino kale with some of the lemon-ghee dressing (also served on the side) and toss it with fresh shaved brussel sprouts, sprouted red quinoa, red onion, shaved pecorino and fresh herbs for a bright bite to this toasty salad.
