In a pot over medium heat, add tikka masala base and heat until simmering- allow to heat through for 10-15 minutes. Enjoy cold or heat saute pan over medium-high heat, add a little oil or butter of your choosing, and add rice, roasted pork (if applicable), sweet potatoes, and black beans. Saute until heated through, about 5 minutes. Transfer rice and bean mixture to a plate or bowl, top with pineapple salsa, dollops of mojo sauce, and garnish with fresh cilantro.

Roasted Chicken Piccata with Rice Pilaf and Lemon Caper Sauce

Stove Top: In a saute pan over medium heat, add a little oil or butter of your choosing- saute rice for 5-8min or until heated through. Transfer to a plate and cover to keep warm while you cook the chicken! In another (or the same) saute pan, add a little oil and heat over medium heat- add the chicken breast and sear on both sides for 3 minutes or so. Once the chicken is heated through, add the picatta sauce and swirl the chicken around to coat in sauce. Plate rice and chicken with the sauce from the pan and enjoy!
Oven Method: Preheat the oven to 400. In an oven-safe dish, add rice to the bottom and place chicken breast on top. Cover and bake for 15- 20 minutes until heated through, remove from the lid, and pour picatta sauce over the top. Bake again for another 5 minutes without the lid. Remove from oven, plate and enjoy!
