In a pot, bring beans to a simmer over medium heat. Meanwhile, heat a saute pan or cast iron over medium heat and cut your cornbread muffin in half. Add a little butter to the pan and place cornbread cut side down into the melted butter. Allow to toast for a few minutes until golden brown. Once your beans are hot, portion into a bowl and serve with a dollop of sour cream and your griddled cornbread.
