Bring a pot of water to a rapid boil, add noodles and reduce to a simmer. Cook noodles for 5-7 minutes. While the noodles are cooking, heat a pan over medium heat and add a little oil or butter of your choosing. Sear chicken or tofu on both sides to heat through, add one tablespoon of water and cover with a lid to lightly steam the chicken or tofu. Heat a large cast-iron pan over high heat, add a little oil and allow to coat the entire pan. Once the oil is hot, add in your fajita veggies (and your carnitas). Stir around quickly and then let sear on one side for a minute or so and repeat until veggies are tender and have a nice caramelized color.
