Roasted Tomatillo and Avocado Salsa Verde

Ready To Eat: Made by dry roasting tomatillos and yellow onions until blackened (by dry roasting, no oil burns which avoids creating the bitter flavor you might otherwise find.) A traditional Italian dish hailing from Syracuse Sicily, made with a GRK twist. Well, a few twists! Made with local spaghetti squash "noodles" and a vegan tomato sauce with roasted red bell peppers, eggplant, black olives and savory fresh capers.
