White Wine Braised Turkey Legs
Seared and slow braised in a classic mirepoix until tender. In an oven safe dish, add turkey legs, sauce and vegetables.

Place in an oven safe dish and bring to room temperature. Cover with a lid and bake for 20-30 minutes at. In the last 10 minutes, uncover and finish roasting so the skin gets crispy. Best within 5 days.

Cranberry and Orange Brined Turkey Breast
Oven 375-400, covered
In an oven safe baking pan, add 1 T of water and bake at 350 covered for 8-10 minutes. Brined in rosemary, sage, cranberry and orange.

Quick blanched green beans with deeply caramelized red onion, shaved radicchio and crumbled walnuts and shallot dijon vinaigrette.

Ghee Roasted Maple Carrots

On a cast iron or heavy bottom pan, roast the carrots on a few sides to get a little color. Top with cinnamon greek yogurt, dates and pumpkin seeds. (Can also be baked covered for 20 min and then topped with yogurt, date and seeds.)

Salted Honey Brussels Sprouts
Oven, 400
Avocado oil marinated brussels are ready to roast.
Place cut side down and roast until crispy (about 15 minutes.) While roasting, bring honey butter to room temp and then mix well with a spoon until butter is incorporated. Once brussels are almost done add pancetta and bake for a few minutes. Pull and toss hot brussels with salted honey and pomegranate seeds.
