A recipe inspired by Mi Cocina, a cookbook by Rick Martinez where he takes you through the different regions of Mexico- what influences the cooking of that region and his personal experiences growing up in Mexico. GRK Lamb Loaf with Tangy Tahini Sauce & Summer Squash Salad

Best within four days. In Cast Iron: Heat pan over medium heat with a little olive oil and sear both sides of the lamb loaf for 6minutes. 

In Oven: Pre-heat oven to 400, place a cup of water in the bottom of the oven (this helps to keep the loaf moist). Bake in an oven safe pan or dish for with a lid 15-18 minutes or until hot!We use Superior Farms pasture-raised lamb and shredded tart apples to create a soft and juicy meatloaf like you've never tasted before. Served with a side of tangy tahini dressing and a beautiful summer salad with local summer squash ribbons, sungold tomatoes and Spade & Plow arugula with a light lemon-garlic vinaigrette.
