Thai Peanut Noodles

Bring a pot of water to a rapid boil, add noodles and reduce to a simmer. Cook noodles for 5-7 minutes. While the noodles are cooking, heat a pan over medium heat and add a little oil or butter of your choosing. Sear tofu on both sides to heat through, add one tablespoon of water and cover with a lid to lightly steam the tofu. Once water has evaporated, remove from the pan and set aside. Once your noodles are done, strain water and place noodles in a bowl. Pour peanut sauce over the top and garnish with herbs, fresh peppers, cucumber tofu and crushed peanuts. Finish with a squeeze of lime and enjoy.

Handmade Sopes with Refried Beans and Carnitas

Pre-heat a cast-iron or saute pan over medium-high heat. Wet a towel with a little water and gently dab the wet towel onto the sopes to moisten the outside a little. Then place in the hot pan flat side down to heat up for a minute or so, flip and cook for another 30-45 seconds. Heat up beans in a small pot, sitrring frequently. Once sopes are done cooking, transfer to a plate. Add a little oil to the hot saute pan, add braised chicken and saute until heated through. Build your sopes with beans, chicken, salsa and crunchy cabbage garnish.

Pre-heat oven to 350 (Convection bake preferred). Place meatballs in an oven safe dish, top with sun dried tomato sauce and bake for 15-20 minutes until heated through. In a pan over medium heat, add a little olive oil and saute noodles quickly and season with a little salt. Serve noodles along side meatballs and sauce, sprinkle with pecorino and enjoy!
