Coconut Rice Pudding with Fresh Fruit

Keeps well for up to five days. Intended to be eaten warm but can also be enjoyed cold if you like. Empty the contents of the rice and milk into a saucepan. Cover and bring to a light simmer for 6-8 minutes. Turn off the heat and allow to sit for 5 minutes. Stir. The rice should be tender but there should still be some liquid that has not been absorbed. Top with fresh fruit and enjoy! Note if you’re planning to use your jar over a few servings, make the whole jar and then store the remainder. If you are going to reheat it you may want to add a little water or coconut milk. (It thickens as it sits which is why we are serving it this way.)
