Chimichurri Chickpea Salad

Toast up Croutons: If your croutons have gotten a bit soft, toast them up for 5-7min. They will crisp up as they cool. In the meantime toss the salad with chimichurri and then top with croutons.

Ready to Eat: Remove the cheese and nuts and seeds from the top of the jar and put them aside. Pull out the kale from your jar and massage it with your hands or a couple forks.
