Braised Greens and Caramelized Onion Frittata with Black Garlic & White Cheddar

Coconut Creamed Yams with Tahini, Toasted Shallots and Herb Gremolata

Best within one week. Heat oven to 350 degrees. Spoon the gremolata off to the side in a small bowl. Place creamed yams in a shallow ceramic dish and cook for 20 minutes.

We start by tossing Jewel Yams with olive oil and roasting them until tender and browning. We cream the whole potato chunks with coconut milk and a dollop of Kevala tahini, add a splash of fresh lemon juice and pinch of rosemary. A side of sprouted and toasted hazelnut gremolata really takes this one over the top! Roasted Cauliflower Salad with Pomegranate and Pistachio

Best within three days. Inspired by an Ottolenghi's recipe in his book Simple. We dressed up this fabulous combination of raw and roasted cauliflower with spicy arugula, fresh herbs and a lemon white wine vinaigrette—combined, it creates a salad that hits all the right notes! Creamy Spanakopita Stuffed Portobello Mushroom

Best within four days. Heat an oven to 350 degrees and place stuffed portobello on a baking sheet. Warm for 20 minutes.

A GRK twist on the classic Middle Eastern spanakopita- but we left the puff pastry out and replaced it with a Far West Fungi portobello mushroom! We start by sauteing spinach and dino kale with garlic, onions and white wine. The braised greens then get dressed in mascarpone cheese, fresh lemon juice and sheep's milk feta cheese, and piled high onto a roasted portobello mushroom. It gets topped with fresh dill and a little more feta for good measure.
