Coconut Creamed Yams with Tahini and Toasted Shallots

We start by tossing Jewel Yams with olive oil and roasting them until tender and browning. We cream the whole potato chunks with coconut milk and a dollop of Kevala tahini, add a splash of fresh lemon juice and pinch of rosemary.
