Pineapple, Jicama & Mango Salad with Orange-Lime Vinaigrette

A recipe inspired by Mi Cocina, a cookbook by Rick Martinez where he takes you through the different regions of Mexico- what influences the cooking of that region and his personal experiences growing up in Mexico. Maria's Sope with Refried Beans and Habanero Salsa (Medium)

Best within four days. Lightly drizzle a skillet with olive oil and warm over medium-high heat. Warm some on the skillet until edges are golden brown. In a separate skillet warm the beans and pork over medium heat. Garnish as desired.

Toast up the sope to be crispy on the outside and soft in the middle. Top with Rancho Gordo refried beans, crunchy cabbage and radish and a slightly spicy habanero and tomatillo salsa, finished with a little sour cream to cool things down a bit.
