Chicken Mole with Mexican Rice

Oven: A beloved Mexican dish made with an assortment of toasted chillies blended into a deeply flavorful sauce to douse on bone in chicken (choose breast or thigh.) Served with sprouted brown rice, cooked with tomato and carrots and topped with fresh cilantro. Bring chicken to room temperature. Place in a oven safe covered baking dish in a pre-heated 300 degree oven. Cover and bake for ten minutes. Turn oven up to 400 degrees, uncover dish and bake for a couple minutes to get chicken skin, crispy golden brown. Heat Mole in a saucepan. Add a touch of water and bring to a gentle simmer, stirring frequently. Top chicken with Mole and enjoy!
