Coconut Creamed Yams with Tahini, Toasted Shallots and Herb Gremolata

Creamy Spanakopita Stuffed Portobello Mushroom

A GRK twist on the classic Middle Eastern spanakopita- but we left the puff pastry out and replaced it with a Far West Fungi portobello mushroom! We start by sauteing spinach and dino kale with garlic, onions and white wine.
