Guajillo & Sweet Potato Polenta Bites with Jalapeno Vinaigrette

Soft Polenta: In a small pot, add polenta squares and a little milk or broth (for a two squares start with a .5c milk or broth, for four squares add 1c). Break up polenta with a whisk and stir continuously over medium heat until smooth and heated through. You may need to add a little more liquid to get to your desired consistency. Plate up polenta in a bowl then dress spring mix with jalapeno vinaigrette, top with heirloom tomatoes, feta, pickled onions, cilantro and serve on top of your polenta!

Griddled Polenta: Heat a non-stick pan over medium heat- add a little oil or fat of your choice and place polenta down on the hot pan. Gently move polenta around so the oil gets underneath. Griddle for 10 minutes or until the polenta is crispy and golden brown. Watch your heat because the polenta can burn! Once your polenta is crispy, remove from heat and dress your fresh spring mix, heirloom tomato salad with feta, pickled onion and cilantro. Plate salad and polenta together and enjoy!

Bring a pot of water to a rapid boil, add noodles and reduce to a simmer. Cook noodles for 5-7 minutes. While the noodles are cooking, heat a pan over medium heat and add a little oil or butter of your choosing. Sear tofu on both sides to heat through, add one tablespoon of water and cover with a lid to lightly steam the tofu. Once water has evaporated, remove from the pan and set aside. Pre-heat a cast-iron or saute pan over medium-high heat. Wet a towel with a little water and gently dab the wet towel onto the sopes to moisten the outside a little. Then place in the hot pan flat side down to heat up for a minute or so, flip and cook for another 30-45 seconds. Heat up beans in a small pot, sitrring frequently. Once sopes are done cooking, transfer to a plate. Add a little oil to the hot saute pan, add braised chicken and saute until heated through. Heat a large cast-iron pan over high heat, add a little oil and allow to coat the entire pan. Once the oil is hot, add in your fajita veggies (and your carnitas). Stir around quickly and then let sear on one side for a minute or so and repeat until veggies are tender and have a nice caramelized color. Add fajita seasoning and stir to coat the veggies completely. Then add the whipped cilantro lime butter and stir to incorporate. Once the butter has melted, turn off the heat and squeeze lime over the top. Warm tortillas through and serve with the fajitas and cilantro.
